Pineapple-Mango Carolina Reaper Hot Sauce Recipe
 
 
 
This Pineapple- Mango Carolina Reaper Hot Sauce Recipe produces an ideal level of both sweet and heat, the perfect combination.This particular hot sauce is excellent on chicken, fish, or prawns/shrimp .Excellent for a glaze.
Ingredients
  • 1 teaspoon olive oil
  • 1 tablespoon Carolina Reaper Chile Pepper Flakes
  • 1 cup freshly cut pineapple, chopped
  • ½ cup chopped mango
  • 2 cherry pepper, chopped
  • 1 cup water
  • ½ cup distilled white vinegar
  • 2 tablespoons chopped  Coriander (cilantro)
  • 1 teaspoon sugar
  • 1 teaspoon paprika
  • Salt to taste
Cooking Directions
  1. Heat a large pan to medium heat and add olive oil. Add Carolina Reaper Chile Peppers Flakes and fruit. Cook about 8 minutes to soften.
  2. Add water, vinegar, sugar, coriander and paprika and bring to a boil. Reduce heat and simmer about 20 minutes. Remove from heat and cool.
  3. Add to a food processor and process until smooth.
  4. Pour into sterilized bottles and serve it up.

INGREDIENTS

  • 6 tablespoons unsalted butter (3/4 stick), at room temperature
  • 2 teaspoons Trinidad Scorpion Moruga chili Powder
  • 1 tablespoon freshly squeezed Lime juice
  • 2 teaspoons tequila ( can be optional)
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon kosher salt

Instructions

  1. Place butter in a medium bowl and, using a rubber spatula, soften until it’s very spreadable. Add remaining ingredients and mix until thoroughly combined.
  2. Place compound butter on a sheet of plastic wrap. Roll into a log and twist the ends to seal. Place butter in the refrigerator to harden. Enjoy

1/2 cup real salted butter – softened

1/4 lime juice

1 teaspoon of fresh coriander

1 teaspoon of Trinidad Scorpion Chili Powder

2 Tbsp. minced onion or garlic

1. With an electric mixer, beat together all ingredients until mixed well.


2. Spread mixture down the middle of a piece of waxed paper and form into a roll about 1 1/2" thick; refrigerate or freeze until solid; cut into 1/2" slices for use.

Trinidad Scorpion & Bacon Infused Vodka

Bacon & Trinidad Scorpion Infused Vodka-
 A killer brunch cocktail – make a bloody mary with bacon and ghost chili infused vodka. An intense mix of savory and spicy, this Bacon and Trinidad Scorpion infused vodka makes the perfect base to a mouthwateringly complex bloody mary
 
Ingredients
6 strips of bacon
6 Trinidad Scorpion dried chili peppers, crushed
1 litre good quality vodka
Method:
Add strips of bacon to a dry, cold, large skillet. Warm the skillet over low heat. Cook bacon until crispy, flipping the bacon several times throughout the process. Transfer cooked bacon to a paper towel lined plate and set aside to cool.

Add peppers (with seeds) to a large, airtight jar. Once cooled, add bacon to the same jar. Fill the jar with vodka to cover the bacon and peppers. Seal the jar and let steep for 7 days in the refrigerator.*

After 7 days, strain the vodka through a cheese cloth lined fine mesh basket strainer into a clean jar or bottle. If you see any major particles floating in the vodka, strain a second time. Discard the bacon and peppers. Store in the refrigerator.

Makes 1 litre.
  • Letting the vodka steep with the chili peppers for 7 days will result in an extremely spicy infusion. If you have a low heat tolerance, I would recommend steeping for a shorter period of time. You can start tasting half way through and strain the infusion once you reach your desired heat level. Keep in mind that this vodka will be used in a bloody mary. You want it to be overly spicy because the tomato juice will turn down the heat level a bit.

1 cup all-purpose flour
1 tsp. salt
1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. Trinidad Scorpion Moruga Chili Pepper
1/4 tsp. black pepper
20 chicken wing segments
1/4 cup butter
¾ cup hot sauce (see Firehousechilli sauce recipe )

1.In a shallow dish, combine flour, salt, paprika, garlic powder, and peppers.

2. Coat chicken entirely in the flour mixture; refrigerate coated wings for 1 hour; coat chicken again with remaining flour mixture.

3. In a 2-quart saucepan, heat butter and hot sauce just until butter melts; turn heat to low and keep warm on stove top.

4. Deep-fry chicken, 8 - 10 pieces at a time, in very hot oil (vegetable oil, canola oil, or peanut oil) for 13 minutes, turning once or twice.

5. Drain chicken on a wire cooling rack for 30 seconds, then immediately toss fried chicken in buffalo sauce mixture and remove with a slotted spoon.

6. Repeat with remaining chicken.

In a Hurry Trinidad Scorpion 7 Pot Chili Chicken
When you need something right away, try this fast chicken chili recipe for one of today's light meals with more than a light taste. Mmm mmm!
2 (29-ounce) cans tomato sauce
1 cup finely chopped onion
2 to 3 tablespoons of Firehousechilli Trinidad Scorpion 7 Pot chili powder
1 teaspoon salt
1/2 teaspoon ground ginger
1 teaspoon grated orange rind
1 teaspoon dried oregano
3 pounds boneless chicken (white or dark meat), cut into 1/2-inch cubes
2 (1-pound) cans red kidney beans

Serves: 6
Cooking Time: 20 min

Directions

1. In a large saucepan, combine tomato sauce, onion, Trinidad Scorpion 7 Pot chili powder, salt, ginger, orange rind, and oregano; bring to a boil.

2. Add chicken, reduce heat to medium-low, and cook 6 to 7 minutes or until chicken is thoroughly cooked,stirring occasionally with a wooden spoon.

3. Add kidney beans, stir gently, and cook just until warmed through.

• 1 teaspoon black pepper
• 1/2 teaspoon paprika

• 1/4 garlic clove, minced, or use dried garlic powder
• 1 tablespoon canola oil
• 2 boneless rib-eye steaks, about 1 1/2 inches thick

Directions:
1. Mix together the Trinidad Scorpion chili powder, black pepper, paprika, Ghost Chili pepper flakes, salt, and garlic.

2. Rub the steaks with the canola oil. Then rub in about 1 teaspoon of the dry rub on each. Set aside at room temperature for about 20 minutes.

3. Meanwhile, prepare a grill .Have your grill very Hot. Cook the steaks for about 8 minutes a side for medium. Let them rest for about 5 minutes before diving in.
